carb air / fuel mixture adjustment

guys
i have a 1988 25hp two stroke yamaha.
had the carbs rebuilt about 3 months ago, and in that time i have replaced the fuel pump diaphragm assy.
the mechanic had the air/fuel screws on both carbs adjusted to 2 1/4 out.
when idling it runs decent, but after a few minutes it wants to idle down and shut off.
i turned the air/fuel screw out more, to 3 turns out, and it now seems to be running more steadily.
the book says 1 1/4 - 2 3/4 turns out.
will i hurt anything running it at the 3 turns out ?
and what does that adjustment affect ? more turns out gives it more fuel and less air, or more air and less fuel ?
more turns out makes it leaner or richer ?

thanks guys. i hope to go fishing tomorrow or thursday and see how she runs..

thanks much for the help....
i would rather have to too rich, adjusted out more, and replace the plugs when needed...
dont want to burn it up if i were to have it too lean, adjusted in too much...
