Carb Options for Replacement

I've got a 2002 Glastron SX195 with the Volvo 4.3 Vortec. Its got the stock Holly Carb on it. I just bought it about 2 months ago with 56 hours on it. We have put about 12 hours on it since and it still doesn't idle very good and has a little cough when you are trying to pull up a skiier. I'm wondering if I could get a better carb for it or possible just do a carb kit in the one I have. Any ideas? It runs good otherwise, I'm just wondering how much performance I'm loosing running this old carb that has a lot of "setting" time in its life. The orig. owner ran fuel stabilizer and ehtanol treatment but you can only do so much when it sets for long periods. It had set fo 9 months when we bought it. When its cold it really doesn't want to idle. Plugs helped and I ran some Lucas fuel treatment and it seemed to help too but the cough is still there. :confused:

I'd do a complete tune-up (plugs, rotor, distributer cap, timing, idle mixture, idle speed, and check choke) and then see where you are at, before jumping on the carb.

How do I check the idle mixture and the choke(which I'm not even sure that is working) I need a manual. The one that came with the boat doesn't tell you crap about anything mechanical.
