Carb questions 71 Johnson 4 HP

I've learned a ton on this forum. Enough to finally get spark in a 1971 Johnson 4 HP. Now I'm rebuilding the carburetor and have a couple of questions.
1. The low-speed needle appears to be flat on the end, as if the point had snapped off. I'm assuming I need to replace it? (pic attached)
2. What exactly does the term "seat" mean when reinstalling the high and low-speed needles?
3. Any tips on removing the needle packing without damaging the threads?

1) Yes, the needle valve should have a point on it.
2) Seat means just lightly touching the valve tip to the to the jet passage, as in, screw the needle into the seat and back out 1 1/2 turns.
3) You can unscrew the needle out of the packing, just keep unscrewing it until it is completely out.

Well, I'll be darned. I ordered a new low-speed valve and it arrived this morning. Believe it or not, it has a flat point! Guess I didn't need a new one after all.
