Carb questions/issues

So I took the boat "OMC out drive with a Ford 302" out on the water yesterday. Started up like normal
No problem gave it a few revs to clear it out.. Tied her up yada yada.. The day goes on and all of a sudden I cannot go wide open throttle anymore. It started spitting a spuddering.. Throw it in neutral and give it a good rev sounds perfect like nothing is wrong. I put it back in forward and hammer down spits and spudders. I tried varrying the throttle % given with the boat running good enough to get on plane. I could hit a little chop in the lake and it would cut out.. Now here's the funny thing. I can put the boat in a tight left hand turn and go wide open throttle and it runs great. Planes out almost instantly hits top speed. I go into a shallow right hand turn and it cuts out again. So I guess under a load is when it's having
Problems but I'm not real sure what is wrong. Floats,needles or just needs a good adjustment? The carb is a 2 barrel Holly with a recent rebuid on it. But the boat has sat for a while so it could be dirty? I'm sorry for the crappy post in advance I'm on my phone due to me knocking my wifi cable out yesterday when parking the boat. Caught it with the wakeboard tower. Thanks in advance.

Ayuh,.... Welcome Aboard,.... Start out by checkin' the fuel filters for Water, 'n Debris,...

Then decide what needs tearin' into...

'bout what Vintage is this "OMC out drive with a Ford 302",..??

It's a 1990 ski deck. And I assume its a ford motor it's got motor craft on dang near everything.

I'm wondering if you have something in the fuel tank that sloshes away from the fuel pick up when you go hard to port.

Has it been getting harder to shift? I would also check the ESA to make sure it's not engaging from drag on the shift cable... I only say this because you say it revs good with no drag, but then sputters with the prop turning

Check out the floats in the carb.

You could have rusted out leaking water ports in the one manifold which is why you get water in the engine turning one direction but not the other. Had it happen just like that before.
