1. Brown some bacon (3 or 4 strips oughtta do it) in a cast iron skillet. Reduce the heat & add cabbage leaves, cover, let it steam until it's as done as you like it. Salt & pepper to taste.

2. Thin slices of kielbasa, potatoes & white or yellow onions. put the slices and cabbage leaves in alternating layers in a buttered casserole dish. Season with salt, pepper, basil, thyme, rosemary and parsley.

Cover with bechamel sauce. bake at 350° until the potatoes are soft.

Bechamel sauce:
Make a light roux using 2 Tbls each butter & flour - add 2 cups milk, whisk while increase the heat slowly almost to boiling, until it thickens.

Look up "pigs in a blanket". I think it's a German dish. Those are great, and I absolutely hate cabbage, so that should tell you something.

My currant favorite is corned venison boiled dinner. I corn the venison roast for 5-7 days, Boil it for two hours and add Parsnip's potatoes carrot's garlic celery onioin and let it simmer another 30 minutes Then I ad the cabbage quarters for the last 15 minutes. They key to cabbage IMO is to not let it cook to long...just until soft.

Re: Cooking cabbage?

I like to put a head of cabbage on the grill when I'm cooking out. I'll quarter it, put a little butter down in it, shake what ever seasonings on it that I want, wrap it up in heavy duty foil and put a little water in it and chunk it on the grill. Quick, easy and it doesnt stink the house up.

Re: Cooking cabbage?

Ron, heres one I think will make you and your wife happy. I had some hot sausage soup in a diner that was pretty good so I had to make it myself my way. It came out awesome.

3 hot sausage patties (broken into pieces)
1/2 lb. ground chuck
onion (diced)
a couple cloves garlic (chopped)
2 cans beef broth (the lower salt one)
1 large can plum tomatoes with juice (smashed)
1/2 bag frozen mixed veggies (any veggies you like)
1/2 head cabbage (cut in bite size pieces)
salt, pepper, red pepper flakes and Italian spice blend.

Brown meat in a little olive oil and drain off fat. add onion and garlic and cook a few minutes.
Add remaining ingredients except veggies and simmer for about an hour or three. add veggies and simmer another 15 Min's or so( If using fresh veggies cook longer of course). Skim off and discard any remaining fat. Enjoy with crackers or add cooked elbow pasta. This recipe would be good with just ground chuck or other meats (or no meat)if you don't like hot sausage.

Re: Cooking cabbage?

Here's an awesome one.

1) core out the center of the cabage (where the stem was) but don't go all the way through the cabbage. You want a deep well inside the cabbage - larger than the diameter of a quarter, but smaller than a silver dollar.

2) Get a large piece of foil that will be wrapped all around the cabbage. Place the cabbage in the center.

3))quarter a stick of butter. Put 1/4 in, then sprinke Tony Chachere's. repeat until all 1/4 are in the well.

4)1/4 another stick of butter and place around the outside of the cabbage and sprinkle more Tony Chachere's around and on top of the cabbage. Wrap the foil around the cabbabe, sealing at the top.

5) fire up your bbq pit. when the coals are good and hot (not flaming), place the cabbage foil pack above the coals.

6)Rotate the cabbage ever 15 minutes or so. cook for 1 hr & 15 minutes.

the cabbage will fall apart and be very tender!
