Coolant temp

I just installed my new Gen six 7.4 and I am getting 100 degree water temp on the gauge no matter the speed. If I shut the engine down and let it sit for maybe 10 minutes and turn the key on the gauge will read 170 or so, as soon as I start it the temp will drop back to near 100 degrees again. I don't think this is normal? I have a new t stat installed. There is a round plastic restrictor type piece that goes into the housing under the t stat, could that be in wrong? I cant seem to find any kind of a diagram for it.

Ayuh,..... Welcome Aboard,...... I believe that piece goes Over the t-stat, rather than under it,.....

Somebody will be along to correct me, if I'm wrong,......

from what I can see it goes under it.
