So, I gave up for now trying to get the old paint off my boat and trying to get her back together. I put the floor in last night and I would like to get the seems and edges glassed today. I have seen folks use fiberglass tape for edges and seams but I would like to know what is a good way to have extra strength tape or mat cut into strips maybe?

You should be able to buy fiberglass tape that will work just fine. Stay away from the CSM for the corners, you want maximum strength there, so go with a woven mat. Tack it in the corners all the way around, then you can cover the rest with CSM if you want to save the money.
