Dill out pilot screw bungs on 2000 F80 / F90 / F100

I have been rehabbing a F100 and after cleaning the carbs including the inline filters and jets, (little screens were full of sugary looking crap) it runs ok, but just ok. Bogs pretty badly if I get on the throttle, and the idle is uneven. Compression is decent- 165-175 PSI after 5 spins of the crank. Cam timing is ok. Replaced fuel filter and some lines. Running on fresh gas (10% ethanol) and seafoam it is boggy. I need to sync the carbs, waiting to borrow a tool (what size is the vacuum port? M6?), but wasn't sure if I need to drill out brass plugs to get to pilot screws? I think I buggered the throttle plate sync a bit today.

Also, has anyone run bigger jets to combat this? this motor has 42 pilots and 125 mains. Thinking about jumping a size on each, as non ethanol gas is hard to find here.
