DT75 -88. Temperature sensors, how do they work?

There seems to be two different temperature sensors on my motor.
The cooling water sensor in the cylinder head have been disconnected, and is also broken (black plastic moulding).
The engine temp sensor in the cylinder block is connected and seems to work (stainless steel body)

I was thinking of rebuild the cooling water sensor but I must firs understand how it works!
Does anyone know how the two temp sensors affects the motor?

The plastic one looks like a level switch not a temp

Ok!
As the plastic one was disconnected (by the former owner) it must be "normally open" and it must also be possible to run the engine.
Any idea when it will switch?
And what happens when it switch to "on"?

My guess is it is a water level switch in the head to let CDI know it is full of water,
may not let motor run above 2000 RPM unless it is full just like an over heat, but not sure

Yes, you are right, the switch is a on/off type, and checks that the cylinder head is full of water.
It have nothing to do with temperature as I thought from beginning.
