You've also gotta make sure all cylinders are firing at speed. If you have a timing lite, clamp the pickup around each wire to check for spark underway. If the cord on the lite is long enough, you could do this by yourself, after checking for firing on the first cyl just stop, move to next cyl, and away you go.
Also, you need to make sure all three carbs are feeding fuel adequately to the motor. Use a spray bottle with fuel/oil mix. When underway, carefully give each carb a good 'spritz' of fuel.
What you'd expect is, if the carb is 'fueling' properly, the engine will slow down due to being too rich from the extra fuel.
If instead, speed picks up, that cyl is lean and the carb likely needs servicing.
Used to do this in the old days by sticking a couple of fingers in front of the carb to vary fuel mixture. A bit harder to do this with the newer carbs that have screens over them.
Needless to say you're gonna need a helper for this one, either to drive the boat or spray into the carbs. Hard to do by yourself!
I can't recall if you've done a compression check since you've had the problem, if not maybe it's time for that too. Just to make sure there's no internal problem.
