I’m trying to confirm which carburetor should be on my engine.
The engine serial number is OF 824893
The carburetor serial number is 807764 6101
This is a Mercarb 2 barrel. How can I be sure this is the correct (original) carb for this motor?
The motor is a Vortec 4.3 LX Gen +

According to the engine service manual and parts catalog, your carb number 807764 seems to be of the correct fit for your engine model type...Which is the 2 barrel carb design.

Also the design of the INTAKE MANIFOLD AND FRONT COVER ought to be another indication of what model carb would have been installed from say new as you'll notice there are 2 part numbers for the intake manifold...1 for 2 barrel & 1 for 4 Barrel...<To see, Hover the cursor arrow over the 2 "notes" of item #'s 1 for more info.
