Engine question for the pros??

Hey guys new to the forums and looking for some light of something I might be missing, real quick I have a 1997 5.7 under the Volvo brand, last year the boat sat up for about 3 month with out starting, well when I went to crank it,, it was locked. So I started to pull it apart and found a very small amount of rust in the #3 cyl.broke it free and clean up the small rust spot on the cylinder. While the heads where off I had them looked at and machine, bought new head gaskets and put it back together, well she started fine and ran fine out of the water under no load, when I got it in the water it was a different story, cruised it at about 2500 rpm for about and hour ran good no temperature issues good oil pressure, as soon as I gunned it to plane it started making a what I at first thought was a loose belt, so I backed off the power and realized it was more of a whistling sound, I shut it down . steam started coming from the carburetor I mean it sounded like a boiling tea kettle. I called sea tow ,, would not restart, I ran a compression check and found #3 with only 50 psi buy the way no water in the oil or cylinder. Pulled the head off and can not see were the gasket might have failed. No damage to the cylinder?? Before I start putting it all back together I would like some insight of what else to look for I having the head rechecked for cracks but other then that aim lost. Any help or ideas would be appreciated

Check thermostat might not be opening all the way. Sounds like it got Hot. You ran It low RPM for quit a while. #3 could have stuck rings so low comp. Are there any scrape line in the cyl. If it was that hot all the fuel could have boiled in carb never seen that but it is a boat.

check the exhaust manifolds and risers for rust and crud, same with the thermostat housing.

the low compression in #3 could be the rings are now toast. your got water in that cylinder. did you discover where? if your boating in salt water, I would suspect your manifolds.

One other possibility is a stuck valve.....I'm going to guess exhaust. It's a little bit of a stretch, but that might have let steam from your exhaust manifold back into a cylinder through an open intake and out your carb.

My guess would be #3.......
