Engine sporadically cuts out at full throttle

I have a new-to-me Four Winns 200 Horizon with the following:

Engine mod - 50FAPNCA, SER # T01290298
Transon *** mod # - 3868413, SER # T00367816
Drive Unit mod # - 3868388, SER # T00802946
5.0l fuel injected

It runs great most of the time but it will occasionally loss power at wide open throttle. It seems like it is starving for fuel. It runs fine when I idle back down and usually runs fine the next time I open it up. Have changed the fuel filter and it has fresh gas.

Any ideas?
