If the exhaust system has a pipe within a pipe (one carries hot gasses one water) how would you ever know if the pipe within has a hole before its to late and the damage is done?? I'm suspecting that my exhaust has killed two engines...is this possible?

Your description of an "exhaust manifold" is a little generic but it's the basics.
You lost 2 engines with no indication of why? 2 engines & nobody found a smoking gun? If an exhaust man. fails, it allows water into the oil. You can have a dead cylinder or 2 or 3 depending on severity of the crack.

How would you know?
A slight miss that goes away
snow white spark plugs
hydro-locking
hard to crank over

Can anyone explain how the exhaust does work and how does the water get in? What route does it take to get there? Just trying to understand this better. Boat wasn't winterized I bought boat w a cracked block and owner said he that engine was new. Don't know why it wasn't winterized...

When I got brand new engine installed should shop have tested exhaust knowing it wasn't winterized properly

From your other threads on this problem, it seems that everything was fine until you overheated it when you got in the seaweed http://forums.iboats.com/showthread.php?t=576529&p=3961238&viewfull=1#post3961238
After that is when you found the hole in the Y pipe and the engine started running rough.

After the overheat, the gaskets probably started leaking between the elbows and exhaust manifold.
