Faulty fuel sender or fuel gauge?

The problem is following - switch on the batteries, turn ignition and the fuel gauge moves to correct position. Everything works fine until you come down from plane and the gauge drops to zero and diagnostics display reads "system faulty". Then if you switch of the engine and batteries and turn everything back on again there is like 50/50 chance the reading will come back. Same will happen if you hit a big wave and it sends a shock through hull.
How do I sort out is it sender or gauge? I have gone through all the wiring on both ends, on the sender cap and on the helm control unit and back of the gauge, but haven't opened up anything yet. There is like a 4 inch dia cap sittin on the aluminium fuel tank with wires, can you just bolt that off without draining the tank or is it risky to have an open fuel tank with fuel? And if everything else is Volvo penta are the senders also VP or these are just "generic" type of parts?

Classic symptoms of a bad or failing connection and or wire.

Gauges are rarely the issue. Pull the sender, (4” dia with cap) test and replace required. Make sure to install a new gasket.

Generic parts…..suggest you replace with aReed type sensor. Much more stabile readings.

Gas isn’t your enemy, the fumes are. No smoking and no power tools…your good.
