Fiberglass work on bass boat

Just bought a 1993 Stratos 285 Pro project bass boat, and I need to replace the entire floor. I don't have the equipment to split the hull to access the entire floor, so I cut the floor into sections to remove. I couldn't access all of the floor to remove, so I cut the vertical section that attached to the floor. This probably wasn't the right move, but it is already done. I'm confident I can glass the floor with no issues, but I'm not sure of the best way to fix the sections I removed. Once the floor is installed, there will be a gap of about 3 inches above it that I will need to fill. My idea is to glass pieces of plywood to use as a backer board then fill the front with peanut butter then glass over that area. Most of the area will be hidden because I plan to extend the fishing platform. Will the peanut butter be strong enough to support the weight of people standing on it? This is my first fiberglass work. I've watched a ton of videos and read through the forum extensively. I tried to attach a picture of the area that needs to be fixed since my description is probably confusing, but I keeping getting an error. Any help is appreciated.

your talking stringers and bulkheads.....you need to replace them too. they rot along with the transom prior to your floor rotting.
