Floatation foam down the center??

Hi all. I've got a small 15' tri-hull double hull (upper-lower) Mongoose bass boat that has foam down the center of the keel, on either side of the stringers. It's the only floatation on this boat.
The one I'm working on restoring is another 15' tri-hull single hull open bow.
The flotation foam on this one is accomplished by two large blocks of foam that have been boxed and glassed, one on either side of the boat amidships. I want to move and reshape the foam for space considerations. I want to take the two blocks, cut them into approx 4"X4"X2' lengths and place them at the floor line where the sides come into the floor. From stem to stern. Box and glass them in. This would free up considerable floor space for a small CC that I have in mind for this boat. Since the Mongoose uses keel foam, why can't I use canned foam in this keel (the floor is out) for added bouancy? She'll be a family use boat, so I want it right.
