a little spin off from SS Mayfloats 'Greater Appreciation' about canning food thread.
Since it's that time of year, thought it might be nice to exchange some traditions come harvest time
RBH, talked about his granddads recipe for stewed tomatoes that were lost forever with his passing{R.I.P.}...Thought I'd share one of mine, passed down the line in my family.
Homemade stewed tomatoes using a crock-pot/slow-cooker
8 to 10 ripe tomatoes
2 tablespoons margarine
1 medium onion, thin sliced
3/4 cup finely chopped celery
1/2 cup finely chopped green pepper
3 tablespoons sugar
1 clove minced garlic{optional}
1 small bay leaf
salt & pepper to taste
Place tomatoes in boiling water for about 20 seconds, then place in ice water to cool them down quickly, peel & core the tomatoes, cut tomatoes into wedges, combine all ingredients into crock pot. Cover and cook on low 8-9 hours. Remove the bay leaf. serve or freeze.
Could use some ideas using cucumbers, and green beans{pole beans} or anything you might want to share...Thanks
