I'm looking at adding a generator and air conditioner to my boat. I have a 22' Bayliner with a decent sized cuddy cabin. I'm not planning on using a marine grade air conditioner or generator. Can a generator be mounted in the engine cavity safely if there is room?

No, not as designed. A non-marine generator will have a vented gas cap which is the last thing you would want down there. You also will in essence be putting a huge spark machine in there as the armature will not be sealed. Last would be the MO2 in the bilge which your motor would not like in high concentrations. Get a Honda 3000, bungee it on deck in the corner and enjoy the cool.

Adding to what the Fishman111 posted, You cannot have the exhaust dumbed into the engine compartment as it will likely kill you, since it would invade the cabin. It would need to be vented outside. A Marine generator would have a water cooled exhaust, plumbed thru the hull. The gas tank vent would also be plumbed thru the hull, and the ignition system would be sealed to keep it from ignighting any gas fumes in the engine compartment.

there are some serious coast guard regulations regarding generators.

Never heard of that brand, but when the factory A/C goes in the boat we are suppose to buy this weekend, that is the route I will go. I see a lot of boats running those and the Cruiseair hatch units. Whatever you get, make sure to check the amperage required at start-up (cycle) as that will dictate which generator you will need.
