I wish that I had the confidence to do this on my own, however I just became a boat owner about a month ago and just haven't learned enough about my 3.0 cobra sterndrive to attempt it. My question is does $1,000 parts, labor and tax sound in line?

well actually it seems a tad high
maybe 300 in parts and 4 hours or so labor.
the cobra is really simple to do.
post us a break down on the parts and labor estimate.

I was quoted 550-600 for bellows replacement from a couple of places. Now I'm adding gimble bearing, u-joint replacement, shift cable and adjustment. Didn't seem to bad, 400 extra bucks to have all that done. Maybe it is.

Does it really need all that?
Just a question you might want to ask yourself, a buddy ,or someone you might could trust with a second opinion. I.E. was the gimble grinding? Is the blah blah...... anyway, just make sure it needs all of the parts they stated. The price sounds reasonable. As for beng an OMC i'm sure it does need all that and some more.

ill do a bellows on a cobra or sx all day long for 200 or so, its an hour job. 15 min to replace the gimbal bearing while I am in there. if the engine needs realining for some reason it may take a bit longer. usually if it was in alignment when the drive came off it will line right back up again. ujoints on the cobra or sx are another 30 min while the drive is off. the shift cable is about 2 hours. the gimbal housing must be removed. I can do the entire job, barring corroded fasteners , in 4 hours or less. depends on access to the inside of the boat.
post us the parts and labor estimate.
