Headliner Material and Floor Leveler?

So the time is drawing near where I'm done removing stuff, and can actually start installing. I found the carpet I will be using throughout the boat, but have decided I want a different material for the headliner. I know the stock product is referred to by boaters as "monkey fur", and I have seen a few places that carry this, but I'm not sure it's what I want. I am thinking about using a different shade of carpet, sort of matching but contrasting the floors and walls, but once again, not 100% sold on the idea. My question is, what readily available material would you guys suggest, or have used? I heard trunk liner can work, vinyl etc... I am rebedding the hatches, cleats, and all thru-hulls to make sure the cabin is 110% water tight.

I will also be placing down a new floor. The main floor and the "floor" area of the Vberth will be done. I know carpet hides slight imperfections, but have been told the material I want to lay will need to go on a perfectly smooth surface. Does anyone have a product that can be spread onto the floor and will make a nice, flat, level surface which can be glued to?
