Helm Controls Rework - Newbie needs help (1989 28' Carver Voyager)

We are going to refresh/rebuild the fly bridge helm controls on a 1989 28' Carver Voyager and were looking for any advice and resources. See attached photo.

We boat on salt water (Newfoundland) so the helm is showing a lot of wear.

A couple of the gauges need to be replaced. Does anyone know where to get the wiring diagrams and more importantly the wire layup diagrams?

I'd like to replace the switch mounting plates that have lost their labels. I'm guessing that I need to "make" custom plates to fit the existing housing. Has anyone made custom plates or know where I could get them made? Cutting the metal is easy but I was thinking about the labeling.

The throttle and drive levers and steering column have also lost their sparkle. I might replace if the price was right. Any idea what sort of expense this would be?
