Help with steering issue

90 welcraft mercruiser alpha one Gen one has hydrofoil skaggaurd on it. When going down lake when water is rough or hit someone else wake almost loose control of boat. Feel like it about to top have to back throttle all the way back. Also sometimes when taking off it will lean to one side or the other after planning out then will come back level. The boat has power steering. The trim tab was broke off then they replaced it with another one but trimmed it down so the prop wouldn't hit it. What are some things I can look at see what wrong. Never had this issue with any other boat I have had.

Ayuh,..... Welcome Aboard,........ Get rid of the whale tail, 'n cut all of the fin off the torque tab over the prop,....

You've got P/S, so a flat zinc is used, rather than a finned zinc,.....

Then try it,.....

It was doing same thing before hydrofoil. Don't want get rid of hydrofoil it makes the boat plane out lot faster, before you was looking at sky for good bit till it finally planning out

I always put my sister in law in the front of the boat. That helped But seriously is your weight distribution somewhat good? In the past I had people bring a 200lb cooler in the back of the boat.
