Will a CMC PT-130 hydrolic jack plate withstand the power exerted by a 1979 Evinrude 140 outboard, or would you recommend something else? What things do I need to consider, in terms of cables and so forth, prior to the installation of a jackplate?

If it's a new 130 jackplate, yes...The 1979 140 became the 115 in about 1985 for prop-shaft ratings.
If it's a weight issue, the 115/140 is around 320-330.
Depending on what you're looking for, a Bob's machine plate is one of the best on the market.
