Have you guys tried some of these kits? We've been experimenting with various kits here at home and I must say, you gotta' try them. We've just bottled a batch of Rasberry Zinfindel and it's delicious! Our preference is leaning toward the 'berry' kits as opposed to the 'grape' flavors. Give it a whirl, you won't be disappointed.
Yeah, and it's cheap to make :p

Re: Homemade wine

Forget the kits? Shall I not post my opinions? Why would you say that? Let me rephrase my post then.
For those of you who don't want to construct an overly complicated and illegal brewery to make overproof, retched, vomit inducing, poisonous, blinding, liver destroying skunk-water try the wine kits, they're excellent.
ah hahaha
It's a sound recommendation SBN, don't belittle it.

Re: Homemade wine

Number one forget the kits is a good thing. I have made homemade wine from scratch. We have our own grapevines and when they produce in an overabundance we make jam and I make a few batches of wine. Personally I think the result is much better than the kit stuff. I think the reason is that it has it's own distinct taste and is not the same as the next kit makes or an imitation of something you can buy in the stores.
Number two if you did not look at what SBN posted when he said forget the kits you missed out I thought it was one of the funniest things I have seen in a while. BTW I also know how to make a still and have used one legally on more than one occasion so you may want to re-think your response about legality.

Re: Homemade wine

Sorry SBN, I hate it when I post something and someone else posts a 'forget it' right after. It takes away from what my thought was... I'll be ok :)

Same to you Peter

Klondike, I never liked wine until I met a neat old fella'... Glenn. He was one of the friendliest people I've met. He turned me on to wine with a recipe like that and I can't remember it... please share?

Neumanns, I have a friend that makes that peach wine/brandt/liqeuor from scratch too, it's awesome! Hopefully we'll get there one day too...

Re: Homemade wine

My wife does the wine.
I do the beer.
I'll ask the wife for the wine fixin's when i get home tonight. I know that she usually uses cider jugs an BIG baloons. Don't know about the yeast and sugar.

As to the beer, the YEAST seems to be critical. Sorry to say that I've had the best success with yeast purchased at a beer/wine homebrew shop.

For both beer and wine, the kits ARE the way to get started. The include ingredients as well as procedures. Once you're comfortable with the basics, THEN you can strike out on your own and develope your own techniques and recipies. The only wisdom I can impart beyond yeast, is CLEANLINESS. Crss contamination from wild yiest or bacteria can really let the wund out of your sails.

As per the brandy, you guys know that "shinin'" is illegal. I couldn't possibly be involved in that ;)

Re: Homemade wine

Klondike, it is illegal unless you are in the process of scientific research then you can make gallons of the stuff. Of course if you use it for drinking then the law might take a mighty dim view of it. Magster I am sorry to have offended you but I thought you were a little harsh in your response to a response meant as a joke. I have never personally used a kit but I have tasted what comes out of one someone else used and I still prefer to pick my own grapes and do everything from scratch. It may surprise you but I don't use any fancy equipment short of my corker. This stuff is about the same grandad made, I assume, I was not old enough to taste any before he died. Wine making the way I do it is a Southern Tradition and even to many of my relatives who don't drink and don't hold with drinking applaude my efforts to keep this and many other traditions alive.
My recipie mixed in a 5-gallon jug at least 1 gallon or more (usually more) squished southern/wild grapes I include hulls, juice, innards and all; 10# bag of sugar: then fill the jug with boiled then cooled water; winemakers yeast (I do splurge for it rather than bakers yeast because the product comes out better but bakers yeast will work). I do wash my grapes thoroughly and sterilize all my equipment. When the fermentation is done I siphon and strain all my 5 gallon jugs into a 55gallon food quality plastic drum I have to mix them so the taste evens out I let that sit a few days then I bottle it and store it in a fridge. I don't usually make 55 gallons more like 15-25 but the drum is what I have to mix in. This sounds crude but it works and many people usually can't wait till I make some because I give most of it away. Of course this is only when my grapes have a good year which means it has been a while. There are many sites on winemaking that describe all the processes to sterilize and what equipment you need but you can shady your own after seeing the stuff and knowing what it does. So anyone wanting to try this go ahead it is not hard nor does it need to be expensive but you do have to be clean.

Re: Homemade wine

My Pop makes his own fruit wines as well. One of which he calls 'Velvet Hammer' (I'm not sure if he coined that or borrowed it). He'll always bring a few bottles to reunions and the like. We (his kids) call it his Truth Serum.

I know he uses kits once in a while for some reason but most of his wine comes from scratch. He's been into it for a long time and even has quite a wine cellar.
