I have a constant beep/horn from my new side mount console... 1994 Merc. 115hp, strait 4-cyl, Ser#OBO230..., Has new t-stat, poppet, pee's real good, and is very warm at the top of the head when running. Is there a (Safe) way to shut this alarm off in the console or the engine? Disconnect a wire (Brown w/blue runner)?

Why disable an alarm? It is prudent for you to prove the engine is or is not actually overheating. Some Mercs had an issue with the magnet in the oil tank falling to the bottom signalling a false oil alarm.

I would like to isolate the issue without throwing parts at it. If it is something simple, then great. Do some of these sensors or 'checks' omit ohms so i can test? I am in the dark on where to turn. Can i visibly see the magnet once the oil is emptied?
