I am going to be applying bottom paint to for the first time on my boat. It currently has the factory paint on it which is in great condition. I will be using Fiberglass surface prep prior (per Interlux advice) According to the primer instructions...I need to use 4 coats to get Osmosis prevention before applying the bottom paint. My question is,. if my current paint is in great condition, do I really need to add the extra coats? Won't the old paint still provide that protection and I can go maybe 2 coats for barrier protection only?

IMO you don't need barrier coat (interprotect 2000e) if you current barrier coat remains intact. If you have to remove some barrier coat to get a rough surface to adherence, then my guess is only 2 coats of barrier would be needed before appling new bottom paint.

Sorry, the paint that is on there now is the paint that it came from Maxxum with. It is not an antifouling paint, but that is what I am putting on there.

Fiberglass boats are not typically 'painted' at the factory, except for the graphics in some cases. Anyway, I usually get tired after 2 coats of barrier coat, even though 3 coats is recommended. One coat would not really be sufficient . . . 2 coats should be OK.

from the factory, your maxum doesnt have paint, it has gel coat.....

which you need to prep by sanding to apply the 4 coats of barrier coat (per your stated instructions) and then you apply the bottom paint.
