idle speed

I finally got the boat in the water today. I replaced the starter and rebuilt the carb. It ran GREAT! Very smooth running, and no hesitation when I gunned it. It got up to about 45 mph in slightly windy, choppy water. I only had one issue. It is idling pretty high, about 1800 rpm. So, when I tried to barely engage the throttle, it jumps forward. Made for a pretty hard time getting it next to the dock, and especially hard when trying to put her back on the trailer.

She has a volvo penta 275 outdrive and 305 v-8 engine. Anyone know how to slow down the idle a bit so that she isn't jumping forward with the slightest bit of throttle?

If you have been shifting at that rpm, you are probably really lucky to still have a usable outdrive.
Disconnect the throttle cable from the carb linkage. Then make sure the engine idles down with the cable disconnected.
If it idles down ok, set it at around 700 rpm, then adjust the end on the cable so the linkage has a slight preload to the idle position.
