Long story but I picked up a tilt/trim unit for a Mercury inline 4 or 6 cyl. motor. It's got the pump and motor inside the boat with the 2 rams on the outside of the transom bracket. There is a harness with 2 wires running into one of the cylinders. Can someone tell me what these wires serve?

I believe you will find the wires are to a micro switch that limits the travel of the cylinder by shutting off the pump when the switch opens. It is used with a three button control switch. My son's engine has a center button that is used to raise the outboard to a position where some higher power settings can be used - above this level only idle power settings should be used. Hopes this helps.

As Erie said, those two wires go to the trim limit switch. The switch is adjustable to open when the motor trims to the edge of the transom bracket. I disconnected and bypassed mine years ago, after it broke.
