Start with basics-
Sounds like its time to rebuild the carbs- check fuel pump, ect

The reluctance to accelerate when cold is an easy remedy -- give her a few minutes to warm up.

Choking a warm engine should flood it out and shut it off. The fact that it makes this one run better can only mean one thing, it's not getting enough fuel through the hi-speed jets. Your motor has an enrichener intead of traditional choke plates -- if the pump fails, the carb bowls run dry, and the choke has no effect.

Carb rebuild is indicated. Shouldn't be run until this is done -- any cylinder starved for fuel is also not getting adequate lubrication.

In my opinion.
