Do not remove permanantly ANY of the foam that was under the seat. IT IS IMPORTANT to save your boat & life.
If you want to add a rear deck. Make sure you FIRMLY attach it to the top deck rails some how !! That is now the only thing holding the rear of the boat in alingment. Use curved clips if you attach the deck to the top hull rails. It must also stop any twisting when you shove the throttle to WOT quickly. Aluminum does not like to be flexed back & forth.
See if there is ANY POSSIBLE way to reattach the seat and still have your deck in place.
I did a bow deck on my 16' Lowe. 1/2" exterior plywood with 3 coats on all of it. Attached a vertical support for the deck by attaching the support to the vertical surface of the tiny bow seat. Stand or sit all day on it. Even has a powered anchor under it. 6 years & fine.
