Log exhaust elbow installation?

I pulled off my exhaust elbows to see how they looked and was fortunate to find no signs of gasket surface deterioration or leaking, so ready to reassemble once I order parts.

I have log style manifolds with raw water cooling, are the stainless plates typically reused or replaced?

Are OEM gaskets available today the best choice or is there something aftermarket that is better?

I've read mixed opinions on using gasket sealant. I can't tell if the original gaskets had any or not, but they were bonded very well and I'd like to get a similar result.

That SS plate is used for motors having A/F in the manifold , the elbow/riser has its own raw water hose

That SS plate was sandwiched between gaskets between the manifold and elbow. Factory raw water cooling , open system, no A/F.

The SS plates are reusable if they are in good condition. The OEM gaskets are still what is recommended by anyone who's used aftermarket gaskets and lost an engine because of them. No sealer!
