I will replace the deck in my '95 Lund 16' Rebel. No bench seats or storage to interfere with access to deck. The (original) deck is held in place with 50 large-head rivets that pass through the carpet and plywood to the aluminum stringers.
I see that most completed restoration project posts show the deck plywood installed before the deck carpet. The projects are usually for larger boats. I will seal the deck screw holes with 5200 sealant, regardless. I would think that glueing the carpet down after the deck plywood is attached to the stringers would make it harder to get the carpet to lay down properly along the edges. Glueing carpet to plywood before attaching deck would seem to make for a more effective carpet to wood bond, (then attach with rivets.)
