Come on. Are you really stumped as to how it's done? It's a pretty simple concept.
If you subtract the sum of both digits of a two-digit number, the results are predictable. A number in between 20 and 29 will always yield 18. Anything between 30 and 39 will always yield 27. Take a look at the sheet with the symbols on it. The symbols move around each time you play the game, but you'll notice that the same symbol is always repeated for 9, 18, 27, 36, 45, 54, 63, 72, and 81. These numbers represent the only results you can ever get if you subtract the sum of both digits of a two-digit number from that number.
It's kind of like saying "Pick a number." "Subtract that number from itself." "Add 69." "Your number is 69!!!"
