Max temp and proper t-stat for 5.7L Merc

I have a 1992 5.7L Mercruiser raw water cooled engine. Currenlty has a 143 degree t-stat. I was recently told that 160 degrees is correct for that engine. Which is correct?
Also, what is the maximum temperature that the engine should reach when running at max RPMs?

Ayuh,... If you're playing in the Salt,... Stick with the 140? T-Stat...
160? should be the Highest you see, at Any rpm or load...
