Measuring for new shift/throttle control cables

I bought a used center console skiff with short, improperly-measured cables. They are worn out now. What is the proper way to determine the length I need to purchase? Any help will be appreciated. I can't use the old cables as a guide, because they ran them straight back beneath the floor to the engine--with no loop(that's partially why they are shot--bent up and frayed).
