Mercruiser 5.0 running cold

Please let me have your advice on this issue.
I have a 25 foot boat (2008 cabin cruiser). The boat has a Mercruiser (5.0
MPI/ B-III). I am new to the area (Forest River, Savannah GA) and I ran
aground last week. I hit a sandbar (soft...sand/mud). I'm sure the engine
took in some sand and mud. Right after I started running the engine (once
the tide came up) I noticed that the engine was running great but cold.
Once I got to the marina, I asked the local Marine mechanic to check
everything. He told me that everything was OK and that probably the sand/mud
got inside the thermostat and that it was "open". He told me that it was not
a big deal... not to worry about it (it would be an issue if it was closed).
He also advised me to take the thermostat out and clean it.
I followed his instructions, removed the thermostat and cleaned it, and it
worked for 1 day(the engine started running at normal temperature). I have
not run aground again or taken any sand or mud since. However, the engine is
running cold again (thermostat got stuck open again). Should I try to clean
it again? Or buy a new thermostat? Or Should I ignore it? (since is not a
bad thing to have an opened thermostat with the engine running cold)

Revising your note:

Buy a new thermostat? Don't ignore it. (It is not the best thing to have an opened thermostat with the engine running cold)
