mercury 150 EFI cooling

got a 97 150 EFI , the motor is with me for just over one month so I don't really have some history of it, the guy that sold it to me said it has been sitting for 2 years, when first tried it seemed to be really overheating and there was little water coming out of the pee hole, so I changed the impeller, no big improvement, so I removed the thermostats and it got a lot better, the pee hole flow was much nicer and stronger and there was also plenty of water going out of the back exhaust hole , and since I am still waiting for the thermostats to arrive I am driving it without them till they come, but still with all that nice looking waterflow the block seems to be really hot, I dont have a thermostat on it, but I can touch it for a max of 1 second with my hand, and non of my previous motors were getting that hot, there is no alarm or issues that look like it is overheating but I am just worried, so is it normal for these v6 to get really hot ? and if not what else from the impeller and the thermostats could be wrong ?

and just to mention I almost never run it at WOT , mostly 40-60%

I believe that is a 2.5 litre block. What you are describing is normal they don't pee until about 1200 rpm or the thermostats open fully. DO NOT run that motor without thermostats the fuel injection needs those in to run correctly. Is there an overheat alarm going off or have you taken a temp with an infared gun.

yes it is a 2.5L block, they didn't have T-stats in the store, 15 days delivery deadline , so waiting for it, and since there is only like a week or 2 of nice weather left this summer, it will have to work without them for that time

Check the old ones in a pot of water. Heat it to 140 DEG and see if they open if they do they are good.. What do you mean it seemed to be overheating

checked them, and they open up until half way, and with them the water flow was obviously restricted, so to the trash they went, and since a pair of new ones with gaskets is 45$ , worth the cost
