motor overheating

I have a 1980 305 chevy IO .I trool the whole day and my motor seems to run at 180 degrees which is fineits when I come into the harborthe tempeture starts to rise.If I turn off the motor and get the trailer bring it up to washget ready to start the temp is always about 205 I start up some steam comes out around the stern drive .I always sit and watch the temp goes down while its runningI have new hoses thermostat and the lower leg has new water pump It has been doing this for along timeDoes anyone else experience this .Do you know why it does it Thanks

It is common for most any engine to gain some heat when it is shut off, coolant is no longer circulating. When you are at the "wash" I assume it is cold fresh water, to provent corrosion? If so I would say this is normal.

open or closed cooling? closed system, engine off, no water circulating, coolant absorbs heat from block and temp on gauge climbs for a while till block temp drops from air cooling or engine restarts and coolant circulates. open system 180 is too high.
