Need advice on a replacement boat....

Need advice on a good fish/ski hull and motor..I presently have a 20ft Starcraft deck boat..115 merc outboard. I mainly use it to load up the friends and cruise the canals and bayous with frequent stops at local watering holes. This boat is perfect for these short cruises but horrible to take out fishing (not even a rod holder in boat). Very unstable on the lakes and not very quick...rides rough in even slight chop, etc.

I am looking for a boat to give me both comforts....fishable, but yet comfortable for those evening cruises, probably around a 21' with I/O or just outboard. Some type of a descent "V" to help in those choppy lakes.

Anyone have any suggestions on a good fish/ski boat out there? Inboard or I/O? Do I get a ski boat without carpet and convert to what I need for fishing...livewell, rod holders, etc.?

I think the majority of the fiberglass fish/skis looks like ski boats with a trolling motor slapped on. I think the aluminum manufacturers fish/skis are much nicer. Starcraft, Slyvan, Princecraft, etc.

I absolutely love my Four Winns H203 fish and ski. 5.0 260 v8, I/O and it skis great as well. The down draft is almost like a fishing boat. Holds my family of 5 and we have a great time. Down side is they no longer make the 203 new but used ones are everywhere if you look. I tried the Tahoe, Glasstron models and all just fitted the ski more then the fishing mode. This is a great in between.
