New Boat restoration, 1981 16' checkmate w/115

This past winter i bought a 16ft Checkmate Enticer with a 115 inline 6 merc. The boat runs... not particularly well... but it could use some work. I don't know how good the price I got it for is (1700) but I think with a little work I can turn this baby around. So I'm going to list what I'm planning on doing and any input is much appreciated.
-Floor replacement. Im going to rip out the carpet and try to get the old floor out and replace with glassed plywood... I'll take a look at the stringers and see if they need to be replaced... also the bilge pump isnt working so I figure this will be a good time to replace that.
-New carpet over the new floor
-Fuel tank is aluminum or something and the gas gauge doesnt work so how do I know how much gas I have? (Fix this somehow)
-Rebuild the motor... carbs, new gaskets, plugs, fuel line, im not sure what else yet.
-Install cd player and speaker (going to be used for tubing)
-Recover all of the seats
-bleed tilt and trim cause they dont work great.

This is my first real restore however I bought my first boat when I was 15.. 3 years ago... it was a 14ft mirrocraft.. I did some flooring work and engine rebuild which I will post pics of

Any advice is great.. Thanks

Pictures of my first boat project... sold this boat for a 400$ profit
