New to me 97 Glastron GS205 with a 5.7, need help/info

Hey, found alot of info on here just not exactly what I'm looking for.
Its a very low time 5.7 Volvo GS with a 5.7 carb. The first time I took the boat out it had a holeshot hessitation to it so I thought I'd check the plugs, they looked good on the inside but the outside had alot of corrosion on them so for a couple dollars I swapped them all out with Ac delco instead of the champions. I had read somewhere to gap them at .45, next time out it sputtered even worse on the bottom end and every time I gave a quick increase in throttle no matter where. As i looked around I noticed a sticker and it said .35 so pulled them all and regapped them and it ran alittle better but still tends to hessitate during hole shot and with any sudden demand of power but then goes away. One of my questions is what cap, rotor and wires should I go with (i figured that would be a good place to start) I dont know much about carbs except that if they are running leave them alone. I'm not trying to go fast just knock out the hessitation and make it run best I can.
Also, where can I find out about my boat (general info) since it doesnt have an owners manual with it.

I suspect the carb's accelerator pump is not delivering as it should, and probably time to get the carb rebuilt. The accelerator pump is actuated mechanically by the throttle linkage and provides a nice squirt of fuel as the butterflies open up to provide a shot of fuel until the carb's main jets can flow enough to keep up.

How or where would be a good place to start or to take it to? How difficult is it to rebuild? The boat doesn't have an hour meter but I'd say its got less that 50 hours on it.
