I think its simple enough using a formica counter surface,
I have a reject counter (10feet long) thats why I suggest that for a layup table. Waxed ply will work too as long as its well supported so it doesn't sag.
Form the outline of the stringer first using clay to make a dam.
wax and spray with pva.
Lay up 2 layers cloth and resin,
let it go off and pour the nida.
when the nida cures lay more cloth on top and resin it.
Pop it off the table and final trim to fit.
I would make up some test panels first and try inserting a layer of mat into the core, ( pour half then sink the mat into it and pour the rest on top).
A cheap layup table can be made with urethane foam sheets from home depot, it has foil on the outside , that can be waxed, but it has to be supported or done on the floor.
