I have a 1970/ 85 hp evinrude which does not have a pee hole. Is there any way I can hook up a tempature gauge to it?

Sure, get the kind that has a sender that goes under a head bolt. I suggest you put it under one of the head bolts that run the hottest, in order to get earliest possible warning. That would be one of the ones toward the center of the V and high up.

The sender bracket for a temp gauge goes under one of the 1/4 x 20 screws on the head cover. A water pressure gauge gets hooked into the cooling system.

That's really interesting. Guess it's been too many years since I've installed a temp guage. Back then, they always went under a head bolt. I'd still want mine located where it would give the earliest indication that something is getting hot. Otherwise, what good is it? IMHO, they aren't much good anyway unless you keep your eyes glued to it. I find something more interesting to look at.
