Depends on the plumbing, engine rpm's and back pressure on lower unit (submerged and boat stopped type thing). The exhaust relief ports are just that and don't necessarily contain water, but could and as stated depends on the above as to how much.
Water should be draining out the prop when on muffs, along with your pee stream.
I used to ski behind a 125 Johnny and there was a nice solid casual flow of water out the ports at skiing speeds. At idle, boat at rest in the water, there might be a slight mist or sputter from time to time.
I don't know about while skiing as I haven't done that for a long time, but at rest, all my past and my current Merc 90 sputter somewhat.
Whether or not your pee stream tells you that all is ok depends on where it is plumbed out and whether or not you have a thermostat and a popoff valve (on larger engines). If it is plumbed off the exhaust manifold water jacket cover (side of the block usually on the port side for inline engines) it just says that the water pump is pumping. If it is plumbed off the head water jacket (where the spark plugs are) it probably is down wind of your stat and if peeing says that the pump is pumping and your stat is opening..............but on that rig, the stat has to open first before you get pee. Sometimes waiting for the initial opening to know you are good to go seems like an eternity.
