Older 11' Whaler

Just bought a 1978 11' Boston Whaler and its complete with those wood pieces and the flat ones(near bow & stern) are so warped i'm thinking about replacing them. My question is what type of wood to use??

You can use marine ply, treated ply, MDO plywood or I think Whaler use Mahagony.
