So I'm new to the boating world. Plenty of experience with cars, so I'm confident I can catch on.

Its an 88 OMC Cobra 5.7L GM

Just pulled it out of storage after 4 years. It was winterized prior to being stored. Besides what's listed in the FAQ about summerizing, what should I make sure to check? Thanks!

Are you sure it was winterized the same way as mentioned in the Winterizing post up in the adults only sticky? If not, do it all. After 4 years, I would do it all anyway. You know the fuel will be bad, both in the tank and the carb. The raw water pump and bellows may be questionable, who knows what the shift cable will be like, or if the steering is froze or not.
After 4 years, you check everything, not just the easy quicky stuff.

It was winterized by a shop. Everything on your list is on the receipt. "check this" inspect that" but who knows if it was really done, or to what degree. Should i just go through the list you have? are the shifter and steering cable driven? meaning they are corroded and binded in the sheath?

should I use something to flush the oil out of the engine and the drive?
