I have the Volvo workshop manual and have been following it. Pulled the outdrive with no issues so far but I have a couple questions.

1. Do I put locktite on the pivot bolts? They have some yellow on them so it looks like a a thread compound was on there at one time but I can't find anything in the manual.

2. I forgot to get the O ring for the water seal tube (the smaller of the round rings) the one on there looks fine; is this a "must" replace or can I re-use the one on there now? Would take a week to get one to me via the web.

3. Is the build-up on the water passage normal? Going to gently scrape it off.

4. is it normal to have great in the u-joint bellow as seen in the attached photo?

5. The old u-joint bellow had some sort of metal ring the went around the inside from front to back. They new OEM bellow does not have this. Do I need to use this ring?

You can try reinstalling the bolts without additional thread compound. I did, and found that there was enough compound and locking ability with what was there.

If you have it back together and the old O-ring looked OK, I would run it as is. It is always preferred to reassemble with new 0-rings, gaskets, and seals, but ........
3. Is the build-up on the water passage normal? Going to gently scrape it off.

You could clean it out, but remember that what you see there may also be in other locations. It doesn't look like there is enough to restrict flow.

The grease around the gimbal bearing is normal. There should be a grease zerk on the right side of the transom shield.for greasing the bearing will push some grease into this area. The spinning driveshaft will will sling some grease. You need to make sure you do not have any water or any thing that looks like whipped cream or a chocolate milkshake inside the bellows.

That coiled spring wire is not used in the new-style bellows. It was intended to keep the older style bellows from collapsing or kinking and coming in contact with the driveshaft and u-joints.
