Overheat alarm????

just replaced the thermostat and the water pump and flushed the engine with water and air in my '81 50 Evinrude, took it out first time last night pee'd like a sailor, ran WOT 15 min-partial throttle 15 again for 15 another 10, then when I went to go back to the launch after running 10 minutes the overheat alarm came on, I looked back and it was still peeing a straight stream,shut it off and popped the hood to check for wires ect and the motor felt universally warm, I could hold my hand on it 10-15 seconds anywhere on the engine including the head before I had to pull it away.

Sat for 2-3 minutes and it went off,ran for 10 more minutes and it came on again but I was in really heavy current and couldn't shut it off right away, ran-5 minutes,shut it off pulled the hood and again it was really warm but not hot and the alarm stopped within 2 minutes.

The tstat I changed was original to the engine (27 years old,.. I know) so this is probably the first time I have run the boat to where it was working correctly.
Wondering if the OH sensor could be bad,as in it trips too soon, the motor shouldn't cool down from overheating to okay again in just 2-3 minutes should it?
We ran the last 5 minutes to the launch and let it sit idling for 10 minutes and no alarm.
Ideas????

very possibly bad sensor if you could hold you hand that long.

Usually if you can hold your hand on it for a 1, 2, 3 count without pulling away it is ok. Will water sizzle on it when splashed? Do you have access to an infrared thermometer to determine the actual temp?

If it is not overheating, the sensor may be shot as stated. You can test it or simply replace it.

Thanks, that is kinda what I thought, now what is the actual name of that part, searched the store and can't find it.
And no way would water sizzle.
