overheating?

I have a 1982 140hp evinrude,last year i had the thermostats and the impeller on it replaced due to an overheating problem and had gotten rid of it. Just the other day I was running the boat pretty much topped out and the buzzer came on for the first time in a year.I pulled the 90* fitting that comes out the the block for the pee hose and there was a little bit of gunk in there so i put a new one on there and tested it out and the motor over heated again,but this time it only over heated on me when i was running it pretty hard again,but if i ran it at about half throttle it would'nt do it.the water pressure coming out of the hose feels like normal and the temperature is a luke warm.was wondering what yalls thoughts on the my problem here and what should i do,appreciate yalls help.also i dont know if it makes a difference or not but i have put alot of hours on the boat since i had everything replaced last year.

Probably a good idea to check your water passage deflectors. You will need to remove the cylinder head (10 larger screws) and you have to use a new gasket.

BTW, the tell-tale lets you know that the water pump is functional, but tell you nothing about the circulation through the cooling passages of your engine.
